DÉGLACER is a chef-owned open kitchen bistro nestled in a cozy garden. The cuisine is a mélange of classic French techniques and Vietnamese produce.


Déglacer (or ”deglazing" in English) is a culinary technique commonly used in classic French cuisine. Deglazing means adding liquid to a hot pan allowing all of the caramelized bits stuck to the bottom to release and create layers of aroma and flavors. This technique embodies our vision of creating traditional French dishes in the most respectful yet original ways. Our name also implies the act of “de-icing” as we strive to bring forth a casual and warm atmosphere among guests.
Our story begins with a simple note:

“The recipe does not make a cook. The cook creates a recipe”.

Our Chef - Mr. Hieu embraces the traditional value of his family whose love is Vietnamese cuisine. His own endeavors further led him to French cuisine, where he was able to hone his idea and skills to finally establish an creative identity, a restaurant of originality of his own.

We invite you to our humble home as our friends as we're eager to know your stories and also to share ours in a cozy place, far away from the hustle bustle of Hanoi.
Our restaurant is available for exclusive use, with maximum capacity of 30 seatings and 50 standing canape style.
